Just stay at or below like 6 gigs if necessary because more RAM than you need also makes the game run worse. I'd say just increase it in steps of 2GB until you can play for a good long session without freezies. So if this is indeed your issue allocating more RAM to the game via the Twitch launcher will fix it. This 'capacity' though, is only the amount that is allocated to the game (java), and not your total system RAM. This is when the game has to pause itself in order to have enough time to clear out its RAM because it reached capacity before it could do it while the game was running. If I'm correct in thinking that it is your game that is freezing, then what you're experiencing may be garbage-collection pauses.
